Induction ready and review

I have looked for the right pans to go with our new Bosch induction cooktop and I think these are them finally, at least about the best out there so far. I have tried over eight kinds, brands and manufacturers and these are really nice. I thought I would let others know what all my searching gave me in information so maybe they don't have to work at it so hard. When cooking with Induction, you need a flat bottom that is magnetized and encapsulated in Stainless Steel. (I do have cast iron but don't ever use them for acidic sauces etc. and they hold heat so much it is hard to simmer when you want to and they are so heavy and I wanted to be able to put pans in the dishwasher if I wanted).Some that are also disk bases are sharp edged and not as finished as nicely but are made for restaurants. I care about not scratching my cooktop with that sharp edges and didn't see the quality that are in the Berndes for not any more money for more quality.I tried tri ply cookware of many brands but none of the tri ply have a flat bottom which is not great for induction. It is good for gas stoves but not for induction! When putting a rulers straight edge, you could see quite a bit of space that would never sit on the hob flat and when trying many of the bonded disk bottoms of many makers, they were not enough aluminum to give a good heat response. I tried a beautiful set of 5 ply (copper and aluminum) from Costco and they were lovely and cooked well enough but had no glass lids and they took quite a bit longer to heat up. Also the shape of them didn't allow me to use pots next to each other well since they were so much fatter than the bases were.These Berndes are thick bottomed bonded disks and have a cut out on the bottoms so that part of the disk is flat to the hob and part is just a little above which I believe is why they do not make any noise on the hob when using them. Many makers cookware made an annoying sound and these are totally quiet. They heat up fast and you can cook at a lower temperature which helps the induction hobs be even more energy effecient. The price is good for the quality.The only other set I liked was made by Calphalon Stainless Steel cookware, called either (Simply Calphalon, (sold on Amazon) or Cooking with Calphalon (sold by Kohl's). I believe they are the same with different handles somewhat and name and seller. They too work great but are not polished stainless as the Berndes pots are. They both cook the same and with nice thick bonded bottoms. Both have glass lids and comfortable handles. Both have pots that fit hobs the best.The Berndes pots are beautiful and the Calphalon look more utilitarian. The Berndes pots can go in the oven at any temp because the handles are stainless and the Calphalon have handles that have a temp limit. The Calphalon are straight upper pots and don't have any curve which is nice if you are using more pans on the hobs at a time and the Berndes have a slight curve but don't limit the use of more pots.These handles on the Berndes are very comfortable, not like I found in some very high end sets (all clad) that I couldn't lift without thinking ouch. Also those were not flat bottomed.The lids have a steam hold and are nice thick glass and the lid handles are big round knobs that feel secure picking up. The finish is beautiful and smooth.This set has pans that fit our hobs very well. I wish the set came with a larger stock pot but I did order a 9 qt. on amazon and am very pleased with the size. It is wide and not really tall so it will heat well with induction large hob.The only things I would like to see changed on these is having a second handle on the saute pan and the lids have a knob that gets water into it when you wash it and you have to unscrew the knob to get the water out.You don't need many plies of metals with induction, just a thick layer of aluminum encapsulated with stainless steel that is magnetic. Some cookware says they are also for induction but are not flat bottoms and that just defeats the purpose of having induction work at its best. There are many with bonded disk bottoms out there but some are very thin disks. Because the bottoms sit flat on the hob, some make a sound that resonates more than others. These are quite except when at a boost level and when reaching a high temp before coming to a complete boil. The Calphalon stainless steel with bonded bases have a little noise when reaching high boil but the water is a rolling boil.I love our induction cooktop so much and don't miss cooking with gas as we did for the last 25 years. Glad Amazon sells these and I was able to get fast shipping etc. especially since I have tried so many and was needing to find a set of pans that work great with induction. I would like to have room to have both sets of Berndes and the Caphalon (Cooking with or Simply) because they both have their benefits for induction. I do think that the Berndes has a thicker base on some of the pots and pans of aluminum and that can possibly make a difference overall but the Calphalon is really close to the same as I can see without knowing what there is on the inside of the base.The pans are beautiful! They will last a lifetime and work as well as they are pretty. Great quality and I do like the hole in the glass lids. Which the knob was different but it doesn't make a huge difference. Not sure yet why the base is like it is and why they did that except to dissapate the heat a little so it is a more gradual change on the flat stove top and they don't hum or make a hob jump when changing settings which all the tri ply cookware did.The other pieces that came with the set (potato masher, spatula, etc.) are really great quality and I can tell I will use them all for years to come. Hope this review helps others. These Berndes Stainless Steel Induction cookware can be used on any other cooking surface and are beautiful to behold while working very well with induction cooking. If you have to look at your pots a lot, these are worth looking at and cooking with.
